The diagram demontrates the two varying methods which are used in black tea manufacture.
Overall, it is a man made ,liner process which include traditional method and modern method.
Firstly, both methods starts from the leaves picking , for a good quality tea , have to pick buds and only two top leaves. Following that, tea leaves are involved in withering process , air pass through the leave racks ,thus 60% of moisture content is eliminated from the leaves. After which , in traditional way, leaves are experienced rolling process that make a rolled,flatand leaves to loose tea powder. Consequent of the process, enzyme is released from leaves. Contrast, cutting is the quick process which involves leaves are cuted, toned ,curled in the modern methode to make a small granular pieces for tea bags . After two main process, while leave spread on the tiles or cement, air and enzyme has reacted chemically that leaves convert to copper colour. This process called as oxidation fermentation . Then copper leaves are dried or fired by putting on oven or hot air dryers. In this last process almost 97% of moisture is phased out from leaves and flavour and aroma are released .
