Encebollado is a traditional Ecuadorian fish stew, perfect for breakfast or lunch. To prepare it, start by cooking tuna in water with salt, garlic, cumin, and bay leaves. Once cooked, remove the fish and save the broth. Then peel and cook yuca in the same broth until tender. Shred the fish and return it to the pot along with red onions marinated in lemon juice, tomato, and cilantro. Serve hot, accompanied by plantain chips, popcorn, or bread.
