The food I eat at traditional festivals or at special events is plov. Plov is the symbol of Uzbek food. It is prepared in every Uzbek family with Uzbek-Russian and Korean influences. Uzbek plov is part of the mentality of the Uzbek people. Traditionally, plov is cooked by men. There are over a thousand recipes for cooking Uzbek plov with various ingredients. In fact, there are some cookbooks dedicated solely to this dish. In different regions of Uzbekistan, people have their own recipes for preparing plov. For instance, Bukhara people prepare plov with green grams, Samarkand plov is light, and Fergana plov is brown, in contrast. In Samarkand, people layer meat, carrots, and rice and steam it. In Tashkent, all ingredients are roasted at the beginning. Commonly, plov is cooked with rice, fresh mutton or beef, yellow or red carrots, onions, and vegetable oil. Traditional Uzbek plov is prepared in a deep cast iron pot, which retains heat well, ensuring the dish is not burnt.
