overall, the process involve four main stages beginning with air entering the system and after this fire prodused smoke and ending whith cooked food being prodused in a smoking box

at the first step fresh air enters the system throw a gap on the lid subsequently the air go into the next comperament where logs are burned and prodused a smoke

folowing this the smoke passes hrough a horisontal pipe that conect thr fire chamber to an undergraund space . finaly, it rises into the smoking box located about grounded level ,where pieces of food are hung and gradualy cooked by the syrculating smoke
