the diagram demonstrates the black tea manufacturing in two distinct way. Generally, the process is in six stages, starting with picking tea leaves and ending with dying.

in the next stage, they are offer two choice of method whether to use traditional or modern one. for the natural method, to release enzym from leaves and getting the flat leaves, a rolling machine will roll these leaves and come to the next step. unlike traditional method, modern one uses a special machine to cut, torn and curl: this is not only faster but also make smaller pieces of granular. the result are oxidated and fermented next. these small leaves pieces are spreaded on tiles or cement, then added enzyme and air to distinct the colour into copper. in the last stage, before the result, the copper leaves are going to dryed in ovens, or hot air driers instead to reduce the bitterness and aroma and eliminate moisture (97%) to finish the process.
