Overall, the production process comprises several stages, beginning with harvesting and collecting olive fruit, continuing with several steps like crushing and malaxing, and ending with decantation and storage of the final product
In the first stage, olive fruits are harvested and collected in the VAT. Those fruits will be washed in the de-leafing process before getting into the olive mill to be crushed. After that, the olive paste from the olive mill is put into a malaxer with a maximum operating temperature of 27 degrees Celsius. From the malaxer, olive paste is piped into a centrifugal press.
There are two outputs from the centrifugal press: virgin oil and pomace. The virgin oil is then placed into separation or decantation. The separation machine filters the oil from water, while decantation leaves water to settle. From both machines, pure olive oil is obtained and saved in a storage tank. On the other hand, pomace of olive oil can be processed further at refining factories.
