The structure of a home smokery and its functioning has been illustrated in the given diagrammatic representation.
Overall, the setup consists of three main components with two components underground and other above the ground level.
The domestic smokery comprises of a U-shaped structure which has two hollow vertical blocks with a base. The two blocks have lids on ground level cach covering the tops. The combustion chamber has an outlet join to a box present above the ground which has a metal bar to hang food.
Turning to the functioning, fresh air enters the first chamber when the lid is opened. As soon as the air enters it travels through the base area into the furnace to facilitate burning. For the fire to burn continuously, logs are put in regularly through the respective lid. As the smoke is produced, it moves through the outlet pipe to the box where the fish are hung using hooks, giving them a smoky flavour.
