The flow chart shows the layout of a domestic smokery and the procedure of smoker.
Overall, the total procedure can be divided into three main steps, and the former two ways is under ground, the final work on ground level.
Looking to the process under ground, the somkery start with the fresh air flowing into the first rectangular tank with a lid. Then it cross a narrow channel to the second tank also with a lid which are filled with a bench of logs. Here the logs was fueled the flame by the air.
In the finally step, the smoke burn from the logs drifted toward the box in ground level through a pipe. So, the food in the consealed box can be steamed and cooked by the hot smoke.
