the diagram below illustrates the way of making Vietnamese “Bánh chưng”. Looking from an overall perspective, there are 3 stages including 10 steps, starting with soaking glutinous rice overnight and ending with unwrapping and serving the final product.
In the first stage of th process, all ingredients are prepared. First of all, soaking glutinous rice overnight then mung beans are soaked and cooked. About the pork, to make it better, is marinated with pepper, salt and shallots. The last marterial needed to prepare is phrynium leaves.
Once done with prepareing, in the next stage, the “Banh chung” is wrapped. Putting all prepared ingredients in a mold, adding them in order: the glutinous rice, the mung beans then the pork and the last layer is the glutinous rice. All that things are put on a leave then folding in a particular way. Next, using bamboo strings to tie it. In the last stage, all unwriped “Banh chung” are boilded in 10-12 hours, the longest step in the process. After that steps, placing heavy objects on top of riped “Banh chung” to make them out of water. Then, let them cool before unwrapping and serving.
