The process starts with the collection of raw milk and pasteurization, followed by standardization and filtration. For the next step, rennet – an enzyme is added to the process coagulation otherwise known as curdling, and is broken down further into curds and whey.
The traditional method also has the process of coagulation but through fermenting microorganisms and inoculation.
Once the milk gets curdled, it goes through cutting followed by stiring and cooking. The next step invloves draining of whey, and the remaining gets milled and salted, which is formed as fresh cheese, ie.cottage and cream cheese. Furthermore it is pored into molds and pressed while draining out the additional whey. Once all this is completed, the last step involves ripening which gives us the final product, ripened cheese.
