The diagram illustrates the making process of cheese starting from raw milk and converting in to ripened cheese, which involves various steps in the middle.
In general, current and most cheese making process involves few additional steps in the beginning, Unlike, traditional cheese making, it involves pasteurization of milk and that undergoes standardization and filtration of the milk. From here both the techniques follow the same way, in which the milk go through coagulation or curdling, where fermenting microorganisms and enzyme named rennet are inoculated.
Futhermore, the curds and whey mixture will be cut down and then it will be stirred and cooked. Afterwards, the curds will be drained to remove whey from it and the drained curd undergoes milling process, where small amounts of cheese will be obtained and that is mixed with salt. At this point, the cheese produced is fresh and known as cream cheese. Finally, the fresh cheese is poured in to moulds and pressed with heavy weights that drains of excess whey and then it is stored few hours to make it ripen, this ripened cheese is sold to the consumers.
