This chart gives information about the procedure of olive oil manufacturing.
From an overall perspective, it is apparent that harvested olives go through 5 stages until virgin oils are made, and to make the final product, virgin oil can be processed by 2 different methods.
At first when farmers pick up olives from the trees, they put them in collection vats. at the second stage, leaves of the olives are removed, and olives are washed to make them ready for the rest of the process. Then, olives will be put in olive mills to crush them and make olive paste. The olive paste will be mixed in malaxer in 27c. at the next step, virgin oil is produced in centrifugal press. Also, an unprocessed substance, called Pomace, can be separated for future processing in refining factories.
Converting virgin oil into the final product can be done in two different ways, either by separation process or decantation that both extract water from the oil. Finally, oils will be stored in storage tanks before packing.
