Overall, it is a linear process comprising of four main stages: harvesting, crushing, separating and storing.
The first step is to harvest the olive from the trees. Then the olives are de-leafed and washed. After that, the harvest olives are crushed in an olive mill to produce olive paste. The olive paste is then malaxed at less than 27 centigrade.
In the next step, the olive paste is put under the pressure by centrifugal press which is turned to the virgin oil. The waste of this pressing, is used for manufacturing some goods. After this, the virgin oil is transferred for separation. This stage, is done by two methods. At the first method, the waste water is removed from the virgin oil by a separation then pure oil is stored in the storage tank. In addition, at the second method the virgin oil is kept in a container which is called decantation and the deposits and water are separated and eventually the pure oil is kept in the storage tank.
