The image illustrates the process through which fish are smoked on a small scale.
Overall, the procedure involves 9 sequential stages: beginning with gutting the fish, followed by a series of washing, drying, and smoking processes, and culminating in the distribution to retailers. Notably, the procedure heavily relies on the use of specific equipment as well as human labor.
The process commences with gutting the fish – the stage where internal organs of fish are removed. Once cleared, fish are left in salty water for about half an hour in order to prevent the presence of any unwanted residue or microbes. Afterwards, the drying process takes place where fish are placed in a circular wooden bucket to eliminate any moisture absorbed from the previous step. Next, fish are steamed for 5 minutes at a high temperature.
These are followed by placing the steamed fish back to the buckets in order to give them time to recover, before subjecting them to a smoking process where they are vapored in vats using wood for approximately 30 minutes. Eventually, smoked fish are ready, but before they are colored in yellow, tightly packed, and ultimately delivered to retailers.
