I don't have much idea about university, but if I had to answer this, I would say the reason why students go to university to study law is that universities have a lot of professionals who become teachers. Those teachers have a lot of experience in law, and that's why they can provide many useful pieces of information and lessons to students. Also, they can offer a lot of advice and suggestions to students.
