Overall, the process involves 3 stages, beginning with collecting an air and ending with smoke-drying the products. All the entire process is going at underground level.
Initially, a space under the earth is fulling with air by a lid at the top. Once air is collected, it goes through pipe to logs, where they are burn and emit a gas to process smoke-dry. Subsequently, this gas goes although by pipe and it doesn’t go straight, but passes through the bricks, thereby being filtered.
The process then continues with an area on the surface, where the exact foods such as meat, fish, and so on are hanging. In the following stage, highly filtered gas smokes the products, where it cannot go out because the process vents in the special box. Consequently, smoke-dried foods are popular for a whole world, because of its unique flavor and how it keeps delicious even after a long time.
