The process commenced with the flow of the air into the pit. The air outside travels into the first pit under the ground level, which is sealed by a lid that can close and open if needed. The air then channelled to an adjacent area via a tunnel, which is the second pit.
The second step is crucial in order to produce smoke. Air travels through a fire camp, stacked with several logs in order to create combustion, which produce smoke. Similarly, the second pit is also sealed with a lid, ensuring the smoke is unable to escape. Lastly, the smoke releases upward through a pipeline and passes the bricks to cook raw fishes and meats, giving them a smoky aroma. In addition, these food items are hung on a huge box, which was placed on the ground level.
