The given figure illustrates the phases of manufacturing of Pu-erh Raw Tea and Ripe Tea.
Overall, it is cleared from the diagram that three initial stages: Pan frying, Rolling and drying under the sun are same for the formation of both teas. However, further steps for both teas varied significantly with Pu-erh ripe tea having two subsequent stages while raw tea ending with one step only.
First and foremost step commences with the pan-frying to inactivate the enzymes. Then, tea leaves undergo the process of rolling and drying under the sun, respectively. Here, the subsequent stages take the sharp turn by involving different stages for their formation. Firstly, for ripe tea, loose raw tea with green leaves is subjected to fermentation by mold for its conversion into loose ripe tea with brown leaves. Then, at the last stage, this loose tea passes a compression phase before becoming Pu-erh ripe tea.
Likewise, after compressing the loose tea, Pu-reh raw tea is forced to age by storing it consequently converting dusty green leave into brown ones. Finally, vintage Pu-erh raw tea will be formed and is ready to unpack.
