The process begins at the mixing facility where water and milk, the main ingredients, are mixed together in order to create a solution. Subsequently, that mixture is transferred to a chamber to let it cool down. This process lasts 5 hours at a consistent temperature of 5 degrees Celsius. Before it arrives at the fermentation stage, salt is added to give it a salty taste.
Once this step is completed, the mixture is ready to be fermented. The mixture undergoes fermentation for five hours, with the temperature maintained at 37 degrees Celsius throughout. Then comes the evaporation process. The product is kept in a sealed chamber at 100 degrees Celsius for 8 hours. At the same time, a valve is opened to release excess steam. Finally, the cheese is left to cool down for 8 hours at 5 degrees Celsius throughout the process. Meanwhile, the excess waste water is drained.
