Overall, these process includes five different steps for making a soft cheese starting from mixing of the raw materials such as water and milk and ending with the formation of the final cheese product.
The initial step for making a soft cheese is start with mixing of water and milk. Then these mixture is allowed for cooling where the temperature is maintained at 5 C for two hours. Afterwhich, it goes into the fermentation phase where the salt is added. During this phase, bacterial activity alters both the physical and chemical properties of the mixture, which is kept at 35 C for six hours. The remaining stages result in the formation of cheese. First, excess water is removed through the evaporation process. In these process, the liquid is heated at 100C for about eight hours. Subsequently, the remaining waste water is then filtered out, and the mixture is again cooled at 5C over a period of six hours. In the final stage the liquid is converted into the thick liquid by cooling process and then the soft chesse is ready for consumption or dispatching.
