Overall, this process consists of 14 steps, which can be grouped in to 3 primary stages. The first 4 steps focus on catching an transporting, while the next 5 steps are mainly for preliminary process and the last 5 steps are for distribution.
Regarding the preparing stage, tunas are collected before being transported by boat. These fish are then met at the port, after which they will be freezed.
One the preparing stage is completed, the preliminary stage takes place. These frozen tunas are then thrawed and washed by clean water before bring sliced open. Subsequently, Salt water are used to cover them, resulting in a yellow collour. Once that is done, these parts are then hanged and smoked on a shelve.
As for the last stage, Smoked parts of the tuna are then boxed and freezed again, then they are preserved in a cold storage. These are then distributed by trucks, ending at fish shops to sell.
