To begin with, fishes were caught in the river using a net and then transported in a canoe by the fishermen. They are sent to port and stored in a refrigerator to freeze. The frozen fish is later removed and thrown into a fresh water to defrost. Afterwards, the fish is caught opened to remove the intestines and subsequently washed with salt water then yellow colour it.
The fish would then be smoked using low steam fire for sometime until it is dried from all fluids. It is then packaged nicely and freezed again for the second time in a cold store. The package fish in the cold store was later distributed using a van which has refrigerator to prevent the smoke fish from going bad. It was then distributed to the fish shop and later sells to consumers.
