At the beginning of the process, fish are caught at sea with large nets, after which they are transported by boat to the port where they are frozen to ensure that their freshness is maintained. Subsequently, the fish are thawed and put in fresh water to ready for processing. Once the fish are cut into suitable pieces, they have to be submerged in salt water with yellow coloring for flavoring before being smoked in a machine with racks.

The process continues with the smoked fish being packaged into boxes. After packaging, the fish are frozen in order to preserve their taste. Finally, the finished products are kept in cold storage and then shipped to fish shops by trucks for selling.
