Overall, there are five main steps in the procedure of manufacturing soft cheese, beginning with mixing ingredients and ending with filtering waste water.
As can be seen from the diagram, intitially, water and milk will be mixed and will be a 5 °C-cooling procedure which will take 2 hours in the second step.After that, an amount of salt will be added and femetation process will start that the mixture is heated 37 degrees for six hours.
In the next step, the evporation procedure will begin that the mixture is steamed at 100 degrees for 8 hours.In addition, the mixture is filtered so as to dispose of water.Finally,this mixture is cooled simultaneously at 5 degrees for 8 hours to manufacture soft cheese.
