I would try to stay calm and composed and try to understand the cause of the poor service. If the service was delayed, for example, if my order was delayed, I would try to consider that the staff is busy and overwhelmed. But if it's severely poor service, such as a long wait for my order or the quality of the food is low, then I would gently ask for the server or the manager. I would describe my dissatisfaction with the service in a constructive manner, explaining what went wrong and how it could be improved.
