The given diagram illustrates the internal structure of a home smokey and the process which smoked food is made.
In general, the home smokey structure include several parts connected to each other on both above and below ground level. The process to produce smoked food makes use of natural air to finish.
The smokey structure a U-shaped tunnel below ground level with two lids on top. The first lid is used to get fresh air into the system, the second lid, however, uses for putting logs inside. On the ground level, there is a box where foods is hang to become smoked. The U-shaped tunnel connects to the box with a pipe run from the side of the tunnel to the bottom of the box.
To produce smoked foods, the first lid need to be open, to get fresh air from outside and logs need to be added into the second lid. Fresh air follows the tunnel and passes through a fire where log are burned. Smoke from the fire then flows to the box on the ground level via a connected pipe. When it get to the food box, it slowly makes food become smoked. The time requirement is various depend on the food type, the longer smoked time, the better the foods are. Compare to other methods of food preservation, this method is simpler and requires less effort to complete, its flavor and lifespan are also superior to others.
