The diagram represents the structure of smokery house and how it actually works.
Overall, the process contain 3 main stages, starting from fresh air coming from outside, logs getting burned to produce smoke and the smoke traveling inside a pipe to a room containing various types of meat for smoking.
Initially, air is lead to the underground air system through open lid. Then the fresh air reaches the area where logs are present and provides oxygen for burning of timbers. The lid above the logs stay closed for limited reach of oxygen so smoke can be produced.
In the further process, the smoke will travel through pipe that designed to lead to a storage room. There, smoke rises through the pipe and provides a pleasing flavor and aroma for meat products like fish or beef that is hanging from above for thorought smoking ,after which will be ready for selling.
