Overall, the process consists 7 steps of producing the olive oil, starting with harvesting it from the tree and ending with with sending to the storage or sale.
Initially, the raw material is harvested directly from the olive trees and is then thoroughly rinsed with cold water to ensure it is completely clean and free from any surface impurities. Following this, the cleaned olives pass through a smashing machine, where they are crushed to produce a prototype of olive paste. Once this has been done, the paste is placed into bags with small holes and pressed in a special hydraulic machine to extract the oil. This pressing stage allows the cleaner oil to separate from the solid residues in the paste. At this stage, the liquid phases are separated: water and oil are isolated from each other using either settling tanks or a centrifuge. The final step is to send the completed olive oil to storage or directly to packing and sale.
