Regarding the first four steps, initially, raw milk is mixed with specific bacteria for acidification. After this, enzymes are added to solidify into curds of cheese, which are cut carefully into small pieces in the next stage. Next, the heating and draining steps are conducted to separate the curds from whey, ready for the next stage.
In the remaining five stages, curds undergo a salting step with a mixture of water and salt. Once salted, cheese curds are delivered to a conveyor belt to be molded into the round shape. The wheels of cheese are fermented in a two-month period and sliced before undergoing the packaging process. Finally, the finished products are dispatched to retail outlets for commercial sale.
