It is evident that making soft cheese includes five main steps, commencing with mixing main ingredients and finishing with cooling soft cheese and releasing waste water.
The first step of making soft cheese is dumping milk and water in a machine which is equipped with a mixer to mix everything together. In the next step, the mixed liquid is cooled at low temperature of 5°C for 2 hours. After that, salt is added to the mixture.
Once salt is added, the mixture is fermented in a machine with a mixer. Additionally, the fermentation takes around 6 hours at the temperature of 37°C. Moreover, the process is followed by evaporation at 100°C for 8 hours. Finally, soft cheese is cooled at 5°C for 8 hours. In addition, at the same time, waste water is released from a pipe with a filter.
