Overall, the whole process consists of five stages and takes approximately 24 hours to complete, beginning with the mixing of raw ingredients, then onto the cooling period, followed up by the fermentation and evaporation of the steps, and ending with a final cooling stage. Throughout the process, temperature control plays a major role in forming the liquid mixture into a thickened product.
The process starts with water and milk being poured into a mixing chamber. After they become thoroughly blended, the mixture goes through a cooling period at around 5 degrees for the duration of two hours, in which it gets continuously stirred.
Next, some salt gets added into the liquid compound through a valve, and then it gets heated to approximately 37 degrees while being stirred. Chemical reactions occur over a six hour period, causing the mixture to become condensed. After the fermentation stage is finished, the thickened mixture gets transferred to an evaporator, where it goes through another heating process, increasing its temperature to about 100 degrees for 8 hours as steam discharges.
In the final stage, the condensed mixture is transported into a cooling tank, where it stays at around 5 degrees for another 8 hours. During this step, a small amount of waste water gets removed through two filtering devices which are connected to the tank’s outlet and the transfer pipe.
