Overall, the process contains five stages such as: pasteurization, ripening of milk, and making of curd, which can take up to two hours.
At the first stage, warm milk is refrigerated at 4°C, which is pasteurized in an oven for about 30 minutes at 63°C to kill the germs and bacteria. After the time is over, the pasteurized milk is poured into another container, which cools down the milk to around 30°C. The main purpose of this is to ripen the milk.
At the fourth step, the ripened milk is pumped to another container within an hour, where the milk is stirred whey to produce curd. The curd produced in this step is again transferred to another container after about half an hour. The curd is cut into small grains, which is than transported to various sectors after proper packaging.
