Overall, this linear process begins with the pasteurization or coagulation, depending on the chosen method of manufacturing, followed by stirring and cooking, and ends with the production of the cheese.
Firstly, when the raw milk is prepared, the process offers two alternative routes like traditional and popular, whereas most common way requires additional steps: pasteurization, standardization, and filtration. After that, milk goes through coagulation process, when fermenting microorhanisms and rennet are added. The next steps are changing the structure by cutting, stirring, and cooking.
Once it has been done, draining of whey should be removed, whereas the remained curds are milled and salted by a specific machines. When all steps has been done, the fresh cheese, including cottage and cream cheese, is ready for consumption. To obtain the ripened cheese, fresh cheese have to be poured into molds and pressed to get a right form by draining the additional whey. Finally, after waiting some time, the cheese is fully matured.
