Overall, there are five main steps, in which each different stage will require mix or heat, with the ingredients of water, milk initially and then filter to have the soft cheese at the end.
Firstly, the soft cheese is made through the process of mixing, cooling and fermentation. In the beginning stages, the ingredients consist of water and milk, they are mixing these two together through this steps. Next, the mixture are cooled in 2 hours at 5 degree celsius. Then, in the “Fermentation” step, these mixtures now become liquid, salt is added and now being heated at 35 degree celsius in 6 hours.
The mixtures are then delivered to the step of evaporation, the temperature now increased up to 100 degree celsius, and the liquid need to be heated up to 8 hours to evaporate. At the final stage, the liquid become thicker, half of them will filter as a soft cheese and the leftover will become waste water. This final step of cooling will need to preserve in 5 degree celsius and keep in 6 hours to produce soft cheese.
