The diagram illustrates the process of producing olive oil from harvesting the olives to storage and sale. Overall, olive oil production involves seven main stages, beginning with picking olives from the trees and ending with distribution of the prepared product. Throughout the process, olives experience cleaning, crushing, and pressing processes and are separated to obtain pure oil.
At the initial stage, ripe olive fruits are picked manually and collected in baskets. They are then rinsed in cold water to remove dirt and impurities. After being washed, the fruits are transported by conveyor belt to the smashing machine, where the olives are crushed. This process produces olive paste, while olive stones are removed as a by-product.
At the next procedure, olive paste is placed in sacks with small holes, which allows liquid to pass through during the pressing process. After that, the liquid moves to the separating stage, where oil and water are divided. In the final stage, the prepared olive oil is stored in containers and prepared for sale.
