Overall, the process consists five main stages, beginning with picking the best leaves, followed by withering, after which process divide into two different method. And lastly drying the leaves. Additionally, during the process there were used various mechanical machines, that is do the process more convenient.
At the first stage leaves were took, but only bud and 2 top leaves picked for quality tea. After choosing leaves, there are mechanical process, where they withering to passing air through leaves on rack. Then, when 60% of moisture is out, the process separate into two methods, which call traditional method, and another one is modern method.
The innitial method includes rolling leaves in speciallized machine to release enrymes from leaves. In modern method leaves are cut, torn and curled just to create a small pieces of granular. Both methods go through oxygen fermentation, by spreading rolled leaves on tiles. Copper color is changed because of the enzymes, After which goes the process of firing to out moisture in total. As a result there are gotten flavored and aromatic black tea.
