Looking at the overall perspective, this process demands 9 actions into two sections.The first includes from collecting pods to roasting, and the second requires from removing outer shell to molding.
In the first stange, the process is started riping red pods from the cacao tree. The pods are harvested, especially white cacao beans. After that, they are fertilization, and it take about from 2 to 10 days. Then fertilized beans are spreat under the sun. To end the fist stage bears under in the sun are roasted under 120-150 °C.
In the second stage, outer shell removed from the beans. At this moment the cleaned beans are crushed. It demands process of conching. In this process the product’s inner part is pressed in order to dilute this beans. After all, ready diluted product tempered and finally, it is molded.
