Overall, there are three main sets of stages in the process: preparation of potatoes, preparation of salmon fish, and mixing both ingredients and delivering. Moreover, the process the process involves multiple manual and mechanical steps, reflecting a moderately complex production system.
In the first stage, potatoes are loaded onto a truck and then transported to a factory – which takes up to a month. Once in the factory, potatoes are thoroughly cleaned. After being peeled, they are then sliced into pieces. Following this, the slices are boiled and subsequently chilled. After that, they are then stored.
In the meantime, preparing the fish can start. Firstly “Fresh salmon is delivered to the facility within 12 hours of being caught.”. Having been cut into pieces, the fish are then marinated with lemon juice and salt. In the next step, the marinated fish pieces are cooked in a steam oven for the necessary amount of time. A group of workers then remove skins and bones from the cooked fish. Pre-prepared peas and sauce can be added to the fish once they have passed the inspection.
In the final stage, the stored potatoes are combined with the cooked salmon mixture, after which they are wrapped. Next, they are frozen before being dispatched/distributed to stores.
