The graph provides information about how much spreads consumed in grams between the time period of 1981 and 2007.Over this span of twenty six years,the modes of spreads had changed differently, while low fat spreads connected later.
At the beginning the largest amount of spreads consumed butter, but there was a progressive decrease(from about 160 gram to 100gram), while in margarine started a stability, next the consumption go down gradually.In 1996 new speard appeared that called low fat , afterwards it increased rapidly (between 10 gram to around 80 gram),then started to fall slightly.
That is also interesting to note that almost all showed a reduction in 2001, as the amount of low-fat spread reached a peak.In 2007 the lowest one was margarine(40 gram), while in a low-fat had more than others ( about 70 gram).
