The diagram illustrates the structure of a home smokery and the process used to smoke food. Overall, the system works in three main stages; air enters the smokery, wood is burned to create smoke, and the smoke is directed into a box where food preserved and flavoured.
In the first stage, fresh air enters through an opening at ground level into a vertical chamber. This chamber is covered with a lid to control the airflow. the air then travels through a small pipe to the second chamber, where logs are stacked. When the logs are burned, they produce smoke, and the lid on top helps keep the smoke inside.
Next, the smoke moves through a horizontal pipe into a chamber made of bricks. Above this chamber, these is a box containing food items, such as fish and meat, hanging from rods. The smoke surounds the food, giving it a special flavour and extending its shelf life.
