In the initial stage, olives are harvested and placed into a collection vat. After harvesting, the olives are washed to remove any impurities before being crushed in an olive mill, where olive paste is formed. This olive paste is then gently stirred in a malaxer at 27 degrees.
Following this, the oil is processed in a centrifugal press, where it is separated. After that, it goes through separation, decantation, or even the pomace process, during which the pomace is removed and can undergo further processing at refining factories. Regardless of the method applied, the oil is eventually transferred to a storage tank, marking the culmination of the production process.
