I would like to talk about Tahjin, a delicious Persian dish that we eat at Yalda night celebration every year. Yalda is a traditional festival marking the longest night of the year. At this night, families come together to chat, to eat and have a good time. My grandmother is the master of chefs when it comes to Tahjin. She starts preparing it early in the morning by layering rice, saffron, yogurt and chicken in a special dish. The magic happens when she bakes it, creating a golden look. Last Yalda surprised us by making a special Tahjin. She knew I was a bit under the weather and she tried her best. The smell of saffron and rice filled the house. After taking the first bite, it feels like a warm hug for my taste buds. What makes Tahjin so special to me, particularly at Yalda night, is how it brings our family together. It is not just about its delicious flavor, but also the love that goes into making it.
