One of my all time favourite t-shirts during traditional festivals in my country, especially during celebrations like Christmas is Appam paired with Beef Curry. It’s a delightful combination that truly captures the festive spirit. Appam is this soft, fluffy rice pancake with a slightly crispy edge and when dipped into the rich spicy beef curry, it’s simply divine. The way these two dishes complement each other is just magical and it becomes an essential part of festives for me. Now let me tell you a bit about Appam. It’s made from fermented rice flour which gives it that wonderful texture and a slightly tangy taste. Moreover, it is cooked in a special appachati which is a curved pan that helps it to achieve that wonderful, perfect, fluffy centre. When I see it being made, bubbling away in the pan, I couldn’t help but I feel excited. And then there is the beef curry. It’s slow cooked with a blend of spices, coconut milk and tender pieces of beef. The aroma alone is enough to make mouth water. These two dishes are stapled during celebrations like Christmas and other special occasions and they evoke such warm memories. I remember when my family would gather around the big dining table and eagerly waiting for the feast to begin. The laughter, the stories being shared and of course the anticipation of that first bite of Appam with beef curry. It’s a kind of nostalgia that warms my heart. Each mouthful is packed with flavours that transport me back to those festive times. In essence, Appam with beef curry is not just about the food. It represents celebration and togetherness. It’s a dish that brings people to the table, igniting conversation and creating wonderful memories.
