People refusing to eat animals has several and diverse reasons. First, for ethical and moral reasons, many believe that killing animals for food is cruel. I even once heard a famous Arabic singer saying that he can never eat something that had soul in it. Second, there is environmental reasons. For example, meat production contributes significantly to greenhouse gases. Moreover, some people prefer a vegetarian free meat diet because they believe that meat is unhealthy due to its high cholesterol content. Religion also can be a barrier from eating animals. For example, in India, people view cows as sacred, so they never imagine themselves eating them. Finally, I would say that some people just dislike meat, taste and texture, or they are allergic to it.
