In general, the process includes three main steps: pumping and controlling fresh air, burning logs, and letting smoke contacting with foods.

After that, in the next period, they burn logs to create smoke and use pumped fresh air to maintain fire in the middle pipe having closed lid. Then, in the third step, they let smoke in the second step go to the food box on the ground through small pipe in order to create smoked foods for responding demand.
In conclusion, all the stages involved in the production of the smoked foods have been completed, and despite of the kinds of smoked foods have been produced from simple steps, but it still keeps delicious taste.
