The diagram illustrates how a home smokery is working and how the food is cooked indirectly by the heat of fire.
Overall, this process has 3 steps: 2 steps happen under the ground, and steps 3 remain above the ground level when food is hung along a pipe into the smoking box. The first part of the structure is an empty underground section with a lid which can be opened on the ground, when this lid is opened, the fresh air enters to start the smoking process. This air goes down and then goes through a pipe to meet the second part. The second part has a similar structure with a lid on the ground, and we have logs and fire which make smoke. This smoke goes into another pipe, and this pipe leads to the third part. Inside the last section, bricks are placed at the entrance of the pipe, which help cool down the temperature of the fire. After that, the smoke is scattered, it go up into the box, where the food is hung. The food like meat, fish… is covered by the smoke
In conclusion, this home smokery use a special process. It make smoke and cool it before the smoke get to food
