Overall, the process includes around three main stages, starting with the entry of fresh air and finishing with the preservation of food inside the smoking box. In addition, this is almost entirely a man-made process.
Regarding the first step, the process starts when air flows into a covered passage on the left. This air then travels downward through an underground tunnel and moves toward the next chamber, where a fire is prepared. In this section, logs are arranged under a lid, and once they burn, they generate smoke.
Next, the smoke is directed through a pipe connecting the fire chamber to the smoking box. Inside, it surrounds the food that is hung from above, and after adequate exposure, the food is completely smoked and ready to be used.
