The image above demonstrates a full cycle of cheese production. It is clearly shown that this process can be done in the old-fashioned way as well as using the modern technologies.
Primarily, any type of cheese takes foundation from a source of a raw milk. After that,the illustration hints us that the primary methods of cheese production part ways at the very beginning being such majority produced nowadays and old fashioned method. Traditionally, raw milk straightly goes to coagulation. However, modern methods require the milk to undergo pasteurization followed by standardization,filtration, and only then get to curdling. At this stage, the milk gets mixed with enzymes preparing it for inoculation. This is a crucial chemical process which occurs in a molecular level inside the milk. The mixture gets fermented by the enzymes. Simultaneously, the mixture gets sliced,stirred and cooked.
Second part of the illustration highlights the seasoning and shaping of the cheese. The dough goes through milling and straightly afterwards salting. This all happens right before it gets pressed by a big piston which gives the final desired shape. Lastly, cheese are kept in shelves for a certain amount of time for it to ripen.
