The diagram illustrates how olive oil is manufactured. Overall, the process includes eight main steps, starting with harvesting olives in the field and ending with the delivery to outlets.
At the beginning of the process, olives are picked up from trees by a rake used by a farmer after which they are stored in a vat within 48 to 72 hours. Next, olives are washed under cool water to make sure they are clean to be brought to a hammer, where they are crushed into stones. Those olive stones are then partly contained in a container, the other goes through a paste to undergo the filtering stage. In this step, olives are pressed and filtered simultaneously by a hydraulic press to extract oil, and the resulting oil is filtered one more time to remove any impurities.
The process continues when the oil is in a centrifuge where it is spun at a high speed and separated out the water. The former is then poured into bottles prior to being loaded onto trucks to be transported to stores.
