The diagram illustrates several stages that take place in mass production of cheese. It depicts how different machines perform different tasks while converting milk to cheese.
Overall, there are 9 stages in most used cheese production method, while, traditional method has 2 few stages. The process starts with milk which is converted to curds and whey, with whey being removed in following stages and curds is processed into final product as cheese.
The first step is pateurization of milk, followed by standardization and filteration, leading to dumping of output into a coagulation tank. In this step microorganisms and enzyme called rennet is added to produce curds and whey. Next steps are cutting, stirring and cooking of the product from previous step.
The following steps include removal of whey from curds. Once whey is removed then grinding of curds into small particles take place in a milling machine, after which salting in done which leads to creation of intermediate product – cottage and cream cheese. This cheese in then poured into moulds and compressed by pressing machine after which it is left out for several hours for ripening, leading to creationg of final product known as ripened cheese.
